We begin with the meticulous selection of baby agave plants for our fields. There, they thrive under carefully maintained conditions. After six to eight years, the time it takes for agaves to mature, we hand-harvest only the perfectly ripened plants.

Next, the spiky leaves are removed, and the heart of the plant or “piña” is put through a state-of-the-art process.  First, it is uniformly cooked in stainless steel ovens.  The fibers are then ground, extracting the liquid sugar.  The sugar is harmoniously fermented with high quality yeast and then put through two distillations at regulated temperatures.
